The weather has turned cooler and comfort foods appear. Although, this one take a little time to cook the aroma filtering through the house chase the chill away.
6 boneless chicken breast (I like to cut into strips for bite size pieces)
2 Tablespoons of (chopped) garlic
1 small slice or chopped green peppers
1 small onion chopped
1 can tomato sauce
1 cup of canned or fresh mushrooms
1 teaspoons parsley
1 bay leaf
1 teaspoon oregano
Dash of salt and pepper
2 Tablespoons cooking wine (optional)
1 teaspoon thyme
Rinse chicken in cold water. Dry with an absorbent paper towel. Cook garlic and green pepper in oil in a deep pot. Add chicken and cook turning frequently, until brown.
Add onions, tomato sauce, mushrooms, parsley, bay leaf, oregano, salt and pepper, wine (optional), and thyme. The amount of the spices can be increased or decreased for your personal taste.
Bring to a boil and reduce heat. Cover and simmer for 11/2 hours until chicken is tender. Serve over rice.
